This New Year our family made a recipe resolution – a commitment to find new, good, healthy recipes to add to our repertoire.

Our meal criteria is that it has to be healthy and nutritious, but it absolutely has to taste good.  We are a family of three busy, active folks, and recipes also have to be filling and give all of us the energy that we need to make it through our days.

This recipe has become one of my go-to meals for our family – it’s a one-bowl Mexi meal and it’s one of my favorites.  It’s comfort food to me.  It’s filling and one of the great benefits of this recipe is that it almost always yields leftovers.  And they taste just as good, if not better, warmed up the next day.

For this recipe, I like to use either ground turkey or veggie crumbles.  The basics of this recipe are the turkey or veggie crumbles, rice or quinoa (or a mix of both),  and black beans.  Then I garnish with salsa, low fat sour cream and 2% shredded Mexican style cheese.

This recipe is super easy, because most of the ingredients go into one skillet and then I use my rice cooker to make the rice or quinoa.  And everyone in our family loves this meal. 

Ingredients:

  • Lean (99% fat free) Ground Turkey or Veggie Crumbles
  • Brown Rice or Quinoa (or a mix of both) – 2 cups uncooked yields 4 cups cooked
  • 1 can Black Beans (I like Eden Organic)
  • 1/2 Packet of reduced sodium Taco Seasoning
  • 1 Tbsp oil (I use Smart Balance cooking oil)

Garnish:

  • Salsa (I like the Publix Greenwise Brand Organic Mild Salsa)
  • 2% Mexican Style Cheese (I use Sargento brand)
  • Reduced Fat Sour Cream

Directions:

  • Prepare the rice, quinoa or mixture according to package directions.  (I use my rice cooker.  If you don’t have one, it’s a great less than $30 appliance for the amount of time and effort it saves.)
  • In a large skillet, heat the 1 tbsp oil and brown the ground turkey or veggie crumbles until cooked through.
  • Drain and rinse the black beans, and add them to the skillet.
  • Mix well and season the mixture with 1/2 packet of Reduced Sodium Taco Seasoning, mixing again to distribute seasoning evenly.
  • Serving Suggestions:
  • Serve the turkey/veggie & black bean mixture over the prepared rice or quinoa.  Add cheese (so that it melts on top – yum), sour cream and salsa and serve.

Super easy, filling, yummy goodness.  I hope you like it as much as we do.
